Shepherd’s Pie is the definition of comfort food in the UK. A rich layer of minced lamb and vegetables topped with creamy mashed potatoes, baked until golden and bubbling. It’s hearty, affordable, and tastes even better the next day.
If you use beef instead of lamb, it’s technically called “Cottage Pie” — but most people just call it Shepherd’s Pie either way.
Ingredients
For the filling:
- 500g ground lamb
- 1 large onion, diced
- 2 carrots, diced
- 2 cloves garlic, minced
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 1 cup beef stock
- 1 cup frozen peas
- 1 tbsp flour
- 1 tsp dried thyme
- Salt and pepper to taste
- 1 tbsp olive oil
For the mash topping:
- 1kg potatoes, peeled and chopped
- 50g butter
- 100ml milk
- Salt and pepper
- Optional: 50g cheddar cheese for topping
Instructions
1. Make the mash
Boil potatoes in salted water for 15 minutes until tender. Drain, then mash with butter, milk, salt, and pepper until smooth. Set aside.
2. Cook the filling
Heat oil in a large pan. Add onion and carrots, cook 5 minutes until soft. Add garlic and cook 1 minute.
Add lamb, break it up, and brown for 6-7 minutes.
Stir in flour, tomato paste, thyme, and Worcestershire sauce. Cook 1 minute.
Pour in beef stock, simmer 8-10 minutes until thickened. Stir in peas, season with salt and pepper.
3. Assemble the pie
Spread the meat mixture in a 9×13 baking dish. Spoon the mash on top and spread evenly. Rough up the surface with a fork for crispy peaks. Sprinkle cheese if using.
4. Bake
Bake at 200°C / 400°F for 20-25 minutes until the top is golden and the filling is bubbling. Broil for 2 minutes at the end for extra color.
5. Rest and serve
Let it sit 5 minutes before serving. Serve with steamed greens or peas.

- Don’t make the mash too wet or it’ll sink into the filling.
