Flour: 2 tbsp, to thicken
Fresh thyme: 1 tsp, or 1/2 tsp dried

Step-by-Step Instructions
Step 1: Make the Mashed Potatoes
Boil the potatoes in salted water for 15 minutes until very tender. Drain well. Mash with butter, warm milk, salt, pepper, and the egg yolk. The egg yolk is the secret to a golden, crispy top. Set aside.
Step 2: Cook the Lamb Filling
In a large oven-safe skillet, heat olive oil over medium-high heat. Add ground lamb and cook until browned, 5 min. Drain excess fat. Add onion and carrots. Cook 5 more minutes until soft. Add garlic, tomato paste, and flour. Stir for 1 minute.
Step 3: Build the Gravy
Pour in the beef broth and Worcestershire sauce. Add thyme, salt, and pepper. Bring to a simmer. Cook 5 minutes until it thickens into a rich gravy. Stir in frozen peas at the end. Turn off the heat.
