**Marinate in The Bowl:** In one large bowl, mix chicken, yogurt, garam masala, turmeric, and salt. Let it sit for 15 minutes while you prep other ingredients. This is your only bowl.
**Sear the Chicken:** Melt 1 tbsp butter in a large pan over medium-high heat. Add chicken and cook for 5 minutes until golden. Remove chicken and set it aside in the same bowl you used.
**Build the Sauce in The Same Pan:** In the same pan, melt 2 tbsp butter. Add onion and cook 4 minutes. Add garlic and ginger, cook 1 minute. Stir in crushed tomatoes and sugar. Simmer 10 minutes.
**Finish:** Blend the sauce with an immersion blender until smooth. Stir in heavy cream and the cooked chicken. Simmer 5 minutes. Garnish with cilantro.
